Tea of the Month
Earl Grey Green

Sri Lanka - Gunpowder Leaf Style.  All-natural bergamot oil blends well with this slightly smoky Ceylon  green gunpowder tea.  This green tea is named after the 4th Earl of Grey, Sir Albert Henry George, who served as Canada's Governor General between 1904-1911.  The tea was discovered by accident - Sir Albert was to attend a tea party in his honor at the Newfoundland parliament.  Several days before the party, the storage shed that housed the black Earl Grey that was to be served was struck by lightening and burnt to the ground.  A local boy by the name of Angus Mcafee recalled that his one grandfather recently received a shipment of fresh bergamot oil from the West Indies and his other grandfather was in receipt of a shipment of Ceylon green gunpowder tea.  After spending the next two days blending the two components, Angus made history!

To make the tea iced:  Measure 12 well-rounded teaspoons of the tea leaves into the sac.  Fold sac over several times to insure tea does not "escape" while steeping.  Place sac in glass bowl.  Pour 2 quarts (64 ozs) of boiling water over the sac and allow to steep for 5-7 minutes.  When cooled, refrigerate.  Serve over 3 ice cubes.  Sweeten if desired.
