Let's talk about the Irish and their tea habits first.  If you are living in Ireland, chances are you are consuming an average of six cups of  tea per day.  As with their other beverages, the Irish enjoy a strong cuppa.

To get the right blend for Irish Breakfast, two teas are selected.  Assam, being the first, is picked from the Second Flush during the month of June during the period of high growth.  The second tea is a Kenyan either being picked during the month of February or August when the most flavorful leaf can be found.  The Assam component brings a strong, deep malty, astringent character while the Kenyan element lends floral notes to the cup allowing for complex depth.  Adding a splash of milk cancels out the tannins and minimizes the bitterness that may be associated with stronger teas.
