Kenya - Delightful tea with expansive flavor notes that tend floral-like. The process producing this green tea is unique from other other green teas. Instead of being steamed or fried, the tea goes through a withering process. Once this step is completed, the tea is put through a CTC (cut, tear and curl) machine and then allowed to sit for several minutes in order for a slight fermentation to occur. Because of this process, this green tea does not have the vegetative tastes other green teas offer. Equally important to note is this estate is recognized by the Fair Trade Labeling Organization and the Ethical Tea Partnership. To be recognized by either of these organizations, an estate must have superior production, while at the same time have an excellent track record in providing a high quality life for estate staff and their families. The polyphenol antioxidant level for this tea is 12.3%.
