Madagascar vanilla notes mingle with the Malabar Coast spices in this Assam-based tea.  The added vanilla gives a creamy finish to the cup.  If you are looking for something different, try making Vanilla Chai Ice Cream.  Ingredients needed - 2 cups 35% cream, 1 cup 2% milk, 4 1/2 tsp Vanilla Chai, 5 egg yolks, 1/2 cup sugar.  Heat cream and milk over heat, removing just before boiling point.  Stir in tea and set aside for 1 hour.  Return cream mixture to heat for 2 minutes.  Strain tea from mixture.  Mix egg yokes and sugar.  Gradually add cream mixture to egg yokes.  Once combined, return to heat  until mixture is thick enough to coat the back of a spoon.  Remove from heat and cool.  Chill overnight.  Place chilled mixture into ice cream maker and follow manufacturer's directions.  The polyphenol antioxidant level in this tea is 9.85%.
