India - Estate Tea - Often referred to as "The Champagne of Teas" with a light muscatel flavor, this tea is from one of the more popular estates. 2nd flush gathering can start in May, but is generally commenced in June. Below are some recipes using this tea. Enjoy!!! Since this is 2nd flush , this full-flavored tea is an excellent afternoon tea served with scones and raspberry preserves.
Darjeeling Hot Spiced Afternoon Tea Recipe:
64 oz spring water
1/2 tsp whole cloves
1/2 stick of cinnamon
1 oz loose Margaret's Hope (or other Darjeeling tea)
4 oz sugar (or sugar substitute equivalent to 4 oz sugar)
4 oz orange juice or juice of 2 lemons
cinnamon sticks to serve with tea
Add the spices to the water and bring to a boil. Pour over the loose tea and allow to brew for 5 minutes. Strain if no infuser or bag was used; add sugar and stir until dissolved. Combine fruit juices with tea mixture. To reheat before serving if necessary, place over a low heat - do not allow to simmer or boil. Serve with cinnamon sticks.
Serves up to 12 people.
Darjeeling Tea Fruit Cup Recipe:
4 oz sugar (or sugar substitute equivalent to 4 oz sugar)
32 oz spring water
4 oz freshly brewed STRONG Margaret's Hope (or other Darjeeling tea) , cooled
4 oz fruit syrup
4 liquid oz crushed fresh orange
4 liquid oz crushed lemon
4 liquid oz crushed pineapple
8 oz bottle lemonade
12 fresh or canned cherries
2 bananas, sliced
Boil the sugar and 4 oz of the water together for 5 minutes. Add the cooled tea, the remainder of the water, fruit syrup and crushed fruits. Chill; when ready to serve, add the bananas, cherries and lemonade.
Yields 12 servings.
Darjeeling Tea Punch Recipe:
8 oz freshly brewed STRONG Margaret's Hope (or other Darjeeling tea)
6 oz sugar (or sugar substitute equivalent to 6 oz sugar)
8 liquid oz crushed fresh orange
4 T lemon juice
16 oz ginger ale
2 litre bottle of lemonade
1 orange, sliced
Put the hot tea in a bowl, add sugar and stir until dissolved. Add the crushed orange and lemon juice; strain. Chill for several hours. Just before serving mix in the ginger ale, lemonade and orange slices.
Yields 12 servings.
